If you have bought some razor clams and you don’t know how to clean them and cook them, in this guide I will explain in detail how to do it giving you useful advice to use these delicious seafood in your kitchen.
The razor shells (solen marginatus) are also called cappelunghe and are molluscs that live in the sand, much loved in the kitchen. These seafood can be bought alive in the fish market, but if you want, even frozen, at the supermarket. The sea razor clams can be cooked in various ways, it is in fact a very versatile product, to be cooked in a pan, baked for the sauce of pasta or risotto, or if you want, even raw.
How to clean razor clams
Cleaning razor shells is very simple, just like other seafood, before cooking, you have to purge and clean the razor shells, so that it is purified from the traces of sand, which would ruin our courses. It is therefore necessary to immerse them in sea water (or water and salt), standing, with the siphon facing upwards and keep them in this way for at least one hour, the time necessary to let out all the sand from the molluscs.

If you have purchased frozen razor shells you will not have to purge them, but only remove the intestinal bag. Instead, take care in thawing them (transfer them from the freezer to the fridge 12 hours before preparation), then open them gently, remove the intestinal bag and rinse them thoroughly under running water.
How to cook razor clams
If you do not intend to serve them raw, which you can only do if the seafood is fresh and of certain origin, once cleaned the razor clams, you will only have to cook them to flavor both first courses, which brought to be served as an appetizer or a main course. Grilled razor clams

During cooking, add pepper and very little salt, then dish the cappelunghe, season with oil and add a chopped fresh parsley.
Gratinated razor shells
A very succulent recipe, which we can serve both as an appetizer and second course, are the cannolicchi al gratin. To cook the razor clams in the oven, we will have to clean them, as we have seen before, then, with the help of a knife, we remove the shellfish from the valves (being careful not to break them) and we still rinse under the water. Now let’s cover an oven dish with aluminium and place the seafood on top of it. Mix in a bowl breadcrumbs, oil, vinegar, chopped herbs, salt and pepper and place the mixture in spoonfuls on the razor clams. Bake them in the oven for about ten minutes and serve hot.
Pasta with razor clams
Pasta with razor clams is a perfect first course for Sunday lunch, or if you have welcome guests. It is a delicious first course, but it is prepared in a very short time, very easily. Leave them to soak in water and salt, then, when they are cooked, we will have to take a pan, bring it to the fire and let it warm up. Then we arrange the razor clams, a glass of water and cover with the lid. Let it cook, until the valves open. When they open, shell a part of them, filter the cooking water and put it aside. In the meantime, put the pasta to cook. In a frying pan, pour some oil, garlic and chilli pepper, then add the razor clams. After a few minutes, blend in the white wine and let it fade. Then add the chopped parsley and the cooking liquid of the razor clams. Drain the pasta al dente and pour it into the pan with the razor clams, mix and serve with a little fresh chopped parsley.
Rape in a frying pan
To prepare a starter with flakes, we can cook the cannolicchi in the pan, we must chop the garlic and brown it in a pan with oil. After a few minutes, remove the garlic and add the razor clams, then add salt and pepper. Cover with a lid and let it cook over high heat for 5 minutes. As soon as they are ready, place them on a serving plate, garnish with chopped parsley and serve quickly.
